Phenomenal Savory Bread Pudding

Recently four of our young sisters were invited to a neighbor’s house in our community for a special dinner. The next day when I asked, “So how was the dinner?”
the response was, “Phenomenal!” That didn’t surprise me knowing that the menu had featured a choice tenderloin of beef, which they all liked and
we rarely have at the Convent. What did surprise and amuse me was that each of them individually wanted to tell me about one special dish
that had put the meal “over the top” and sent it “out of the park.”

This was a savory bread pudding that included leeks, fresh mushrooms, Gruyere cheese, pancetta, and sherry. Well then, why wouldn’t that
impress anyone as a phenomenal dish? And because our brave leeks are still holding their own out in the garden, why shouldn’t we give
it a try here at home?  Well, we did, and sure enough it scored a home run with the whole sisterhood. Why not try it yourself and see

Phenomenal Savory Bread Pudding

  1. Preheat the oven to 350 degrees F.
  2. Spread the bread cubes on a sheet pan and bake for 15 to 20 minutes, until lightly browned. Set aside.
  3. Meanwhile, heat the oil and butter in a large (12-inch) sauté pan over medium heat.
  4. Add the pancetta and cook for 5 minutes, until starting to brown. Stir in the leeks and cook over medium heat for 8 to 10 minutes, until the leeks are tender.
  5. Stir in the mushrooms, sherry, 1 tablespoon onion salt and 11/2 teaspoons pepper and cook for 10 to 12 minutes, until most of the liquid evaporates, stirring occasionally. Off the heat, stir in the parsley.
  6. In a large mixing bowl, whisk together the eggs, milk, chicken stock and 1 cup of the Gruyere.
  7. Add the bread cubes and mushroom mixture, stirring well to combine. Set aside at room temperature for 30 minutes to allow the bread to absorb the liquid.
  8. Stir well and pour into a 2 1/2-to-3-quart gratin dish (13 x 9 x 2 inches). Sprinkle with the remaining 1/2 cup Gruyere and bake for 45 to 50 minutes, until the top is browned and the custard is set. Serve hot.

Hot Chicken Salad Bundles with Roasted Red Pepper Sauce

Winter has finally hit Cape Cod. With our first snow flurry and single digit temperatures, I felt it was time to create new twists on some old recipes, to warm and delight the cockles of our guests’ hearts: a summer favorite bundled up and served on a puddle of roasted red pepper sauce, giving it just that bit of flair. From the comments I heard, I believe we struck it right with this recipe.

Hot Chicken Salad Bundles with Roasted Red Pepper Sauce

Prepare the Chicken Salad
  1. Preheat oven to 375 degrees
  2. Mix all of the chicken salad ingredients together in a bowl and set aside
  3. Roll out two puff pastry sheets to 11 x 11” and cut into 2- 5 x5 “ squares (removing one inch of the border – the pastry needs to be this measurement to be thin enough)
  4. In the center of the square put about a ½ cup of chicken salad and draw the sides up to create a bundle, twisting and pinching the top to secure.
  5. Place the bundles on a parchment lined pan and brush with egg wash
  6. Cook for about 15 min. or until golden and cooked through
Meanwhile prepare the pepper sauce
  1. Heat the oil in a saute pan.
  2. Add the shallot and cook until soft.
  3. De-glaze the pan with white wine and cook 1 minute longer
  4. Add the stock and the drained roasted red peppers. Cook 5 min.
  5. Cool slightly, and puree in the blender
  6. Season with lemon juice, salt and pepper and transfer to a small saucepan to reheat a few minutes before serving.

Lamb Shanks Ossobuco

As we head into the cold, long days of winter, I find myself craving comfort food that warms every part of you. A bowl of steaming stew, perfect buttery mashed potatoes or even a simple bowl of spaghetti Bolognese can fill the bill on any particular day.

I found lamb shanks on sale at the store this week and was delighted to pair them with this ossobuco style recipe for the ultimate comfort food. Usually made with veal, lamb is a nice change and the succulent meat falls off the bone when made overnight in your slow cooker. The word literally means hollow-bone and refers to the middle part of the hind shank, which has tender meat around the marrowbone. Served with risotto or polenta, ossobuco makes a delicious and satisfying meal.

Lamb Shanks Ossobuco

  1. Cut through the tendon that connects the meat to the bone at the bottom of the shank -this will allow the meat to bunch up nicely. Season the shanks generously with salt and pepper.
  2. Heat a large frying cast iron skillet or heavy fry pan over high heat. Add 2 tablespoons of olive oil, and brown the shanks a couple at a time, turning until dark brown all over (browning creates a great depth of flavor you get once they’re cooked). Set the shanks aside in a slow cooker.
  3. Reduce the heat to medium and add the 3 Tbsp. olive oil, butter, onions, carrot, celery and garlic to the same frying pan. Cook, stirring, for 10 minutes until the vegetables are golden and soft.
  4. Turn up the heat to high, add the wine, bring to a rapid simmer and let it bubble for 30 seconds or so to burn off the alcohol.
  5. Add the tomato paste, thyme, rosemary, stock, tomatoes, bay leaves and sugar to the pan and stir to combine. Pour or spoon carefully over the shanks. Cover with the lid and cook in the slow cooker on low for 6 hrs., spooning liquid over the shanks every now and then. The meat should be almost falling off the bone by the end.
  6. Gently remove the shanks using tongs or a large spoon (careful as they will be very delicate) and set aside in a dish covered in foil.
  7. Put the cooking into a large saucepan, add the butter to the sauce and boil for about 10 minutes to reduce slightly, or until it’ a nice pouring sauce. You may need to add 2-3 tsp cornstarch mixed with 1/4 cup cold water to thicken it up. Season to taste with salt and cracked pepper.
  8. Serve the shanks over creamy mashed potatoes, polenta or risotto alongside steamed green vegetables. Pour the sauce generously over the top. Sprinkle with parsley and lemon zest if you like. Andiamo mangiare!

Prosciutto, Fig and Gorgonzola Pizza with Arugula Salad

This past spring, the brass group of our community built us an amazing outdoor kitchen and wood fire oven inspired by the one we have at Villa Via Sacra, our mission house in Barga, Italy.  All summer long and even now into the colder months of fall, we’ve been able to fire up the oven and make one of our favorite foods, amongst other things, pizza!

When I served at Villa Via Sacra, I invented a Tuscan pizza of gorgonzola and prosciutto with fig jam that we had made from our gorgeous fig tree.  It was delicious – almost like dessert – and we quickly adopted it as one of our “house pizzas”.  This past weekend, we hosted a men’s retreat at our community, so I thought it might be fun to make some adaptions to this recipe and really perfect it – once and for all.  I am so happy with the results!  Thin crust pizza with a mixture of sweet and salty ingredients topped with a salad of crisp nutty arugula that’s been tossed in a balsamic vinaigrette.  Heaven begins here!  It doesn’t get much better than this!  Now that figs are readily available in the market (get green fresh ones, not dried) and certainly are a treat to many, you just might want to fire up your oven and give this a try.

Prosciutto, Fig and Gorgonzola Pizza with Arugula Salad

Dough:
  1. Place ¼ cup very warm water in a small bowl and sprinkle with the yeast. Let sit for 5 minutes or until yeast is hydrated and creamy (This will allow the yeast to be quickly absorbed by the flour).
  2. Place flour, salt, yeast mixture, and remaining water in mixer bowl fitted with a dough hook.
  3. Mix on low speed for 2 minutes to combine. If the dough appears too wet and sticky and is not combining, add flour 1 tablespoon at a time while mixing until dough takes on a “shaggy” appearance.
  4. Drizzle with oil and mix for 2 minutes more. Dough should form a smooth ball and clear the sides of the bowl.
  5. Turn mixer off, cover top of bowl with plastic wrap, and let rest for 20 minutes.
  6. Resume mixing on medium low speed for 3 minutes, or until dough forms a smooth ball, clearing sides of bowl.
  7. Place in a lightly oiled bowl and cover with plastic wrap.
  8. Let sit at room temperature for 2 ½ hours. It will double in size. Dough may be used immediately.
Instructions for Assembly:
  1. Preheat oven to 500 degrees or highest setting
  2. Cut dough into 4 – 8 oz. balls
  3. Dust both sides of dough with flour and roll out to make a thin crust
  4. Drizzle with Olive oil
  5. Sprinkle generously with Gorgonzola
  6. Place into a wood fire oven (or regular preheated oven – preferably on a pizza stone)until the crust is starting to golden
  7. Remove from oven and quickly distribute on top of the pizza: sliced fresh figs, cover with slices of prosciutto and dot with fig jam and mascarpone cheese – don’t get too heavy on any one ingredient or your end result will be soggy and the individual flavors will be lost.
  8. Drizzle with olive oil
  9. Place back into oven for about another minute – watch carefully
  10. Meanwhile, dress a bunch of fresh arugula with an aged balsamic vinegar, olive oil, salt and pepper
  11. Once out of oven, top with the dressed arugula, slice and enjoy!

Stuffed Cabbage Rolls

Last week we started “putting the gardens to bed” for the season.
This end of an era always seems to creep up on us before I expect it
to.  For me it is always accompanied with a certain sadness.  No more
beautiful early morning sights of garden tubs overflowing with choice red
tomatoes, crisp green lettuce and chard, gorgeous shiny eggplants and
colorful summer squashes  ushering in the new day. What did arrive
this morning were some wonderful prizewinning heads of cabbage, a goodly
amount of green beans and plenty of assorted tomatoes.  So tonight we
will enjoy  a favorite old  world classic for our dinner:  Stuffed
cabbage rolls with fresh garden tomato sauce along with tender whole
green beans.

Stuffed Cabbage Rolls

  1. Cut up tomatoes and simmer with olive oil, onion salt, oregano and sugar until reduced to 1 cup or 8 ounces of sauce. Can be done while preparing cabbage.
  2. Leave cabbage whole, but cut around the stem, and parboil for 5 minutes; let steep for another 5 minutes. Remove cabbage from water and drain; separate cabbage leaves. Chop the small inside leaves and the core and use to line a Dutch oven.
  3. Combine all the stuffing ingredients and mix thoroughly. Season with salt and pepper to taste. Place 1 tablespoon stuffing on each of the larger cabbage leaves, fold ends of leaves over the stuffing, and roll leaves.
  4. Arrange the stuffed cabbage leaves in rows in Dutch oven; sprinkle each layer with olive oil, tomato sauce, and crushed bay leaf. Sprinkle lightly with salt and pepper; add remaining tomato sauce, beef broth and enough water to cover. Place a plate on top of cabbage rolls, and simmer over low heat for 1 hour. Serve the cabbage rolls with the pot sauce pored over them.

Simple Summer Salad

Sometimes simpler can be better. This is true with many things including food.  Complex cooking with multi- layers of flavor and texture has its place,however combining just a few select foods can sometimes take ones breath away. Such was the case with a lunch we served last week to some visiting bell ringers.

Our change ringing bells bring many bell ringers here from many places to hone their ringing skills. They come for different lengths of time and are often here for meals. Most of them prefer healthy foods. All of them love our fresh garden vegetables especially our salad bars. Right now when eggplant and tomatoes are at their best we put them together in a simple salad that almost made itself. Together with a few special seasonings this dish kept many of them coming back for just one more helping all through the meal. This dish along with some crusty  French or Italian bread and a favorite cheese, if desired makes a most satisfying lunch or light supper. Two important tips to insure the best flavor – use very ripe tomatoes and serve the combined ingredients at room temperature NOT chilled.

Eggplant Parmesan

  1. Cut the eggplant and tomatoes into cubes and salt both generously with onion salt.
  2. Toss eggplant with 1/2 cup of oil and spread out on parchment lined pan. Roast at 400 degrees Fahrenheit until golden. Let Cool.
  3. Grate onion and add to tomatoes stir and leave at room temp.
  4. When eggplant is cooled to room temperature combine with tomatoes.
  5. Add oregano and place in serving dish. Sprinkle with olives and finely chopped basil.
  6. If desired top with grated cheese. This combination of ingredients is perfectly flavorful as is but if a little more tartness is preferred sprinkle with a splash of vinegar.
