Simple Summer Salad

Sometimes simpler can be better. This is true with many things including food.  Complex cooking with multi- layers of flavor and texture has its place,however combining just a few select foods can sometimes take ones breath away. Such was the case with a lunch we served last week to some visiting bell ringers.

Our change ringing bells bring many bell ringers here from many places to hone their ringing skills. They come for different lengths of time and are often here for meals. Most of them prefer healthy foods. All of them love our fresh garden vegetables especially our salad bars. Right now when eggplant and tomatoes are at their best we put them together in a simple salad that almost made itself. Together with a few special seasonings this dish kept many of them coming back for just one more helping all through the meal. This dish along with some crusty  French or Italian bread and a favorite cheese, if desired makes a most satisfying lunch or light supper. Two important tips to insure the best flavor – use very ripe tomatoes and serve the combined ingredients at room temperature NOT chilled.

Eggplant Parmesan

  1. Cut the eggplant and tomatoes into cubes and salt both generously with onion salt.
  2. Toss eggplant with 1/2 cup of oil and spread out on parchment lined pan. Roast at 400 degrees Fahrenheit until golden. Let Cool.
  3. Grate onion and add to tomatoes stir and leave at room temp.
  4. When eggplant is cooled to room temperature combine with tomatoes.
  5. Add oregano and place in serving dish. Sprinkle with olives and finely chopped basil.
  6. If desired top with grated cheese. This combination of ingredients is perfectly flavorful as is but if a little more tartness is preferred sprinkle with a splash of vinegar.

Melanzane alla parmigiana – Eggplant Parmesan

Our gardens are bursting at the seams with eggplants.   I just love the shiny purple beauties and feel slightly sorry for the bad rap they get from opinionated palates!   Over the next couple of weeks, we are going to attempt to set those opinions straight and give you some trusted recipes that will transform this ordinary vegetable into an extraordinary culinary delight.

In writing this, I am reminded of a wonderful book I read many years ago as a young Sister when I was exploring my Jewish roots.  The book, To Life!  by Rabbi Harold Kushner, is filled with wonderful insights into human nature and God.   I underlined over and over as I read through the book.  One particular quote has remained with me, the author says, “To be human is to choose to be good; to take something unholy and make it holy, something ordinary and transform it into the extraordinary. To sanctify the world and live a Godly life”.

Praying that co-working with God today will begin to make the ordinary extraordinary.

Melanzane alla parmigiana – Eggplant Parmesan

Sauce
  1. Heat the 2 Tbsp. of olive oil in a heavy (non-aluminum) saucepan.
  2. Add the onion and half of the basil, the Italian seasoning and the salt.
  3. Allow to simmer over low heat, stirring occasionally.
  4. Cook until the onion is translucent and then add the garlic.
  5. Add the tomatoes, cover with a lid, and cook until the tomatoes are soft and have melted into a sauce.
  6. Add the sugar to taste and adjust seasonings.
  7. Continue cooking so the sauce can thicken and add tomato paste, if desired for a thicker sauce (you don’t want your sauce to be watery!).
  8. Adjust seasonings to taste.
Eggplant
  1. Cut the eggplant into slices and sprinkle with salt. Put them in a colander and leave for 30 min. while the bitter juices drain away.
  2. Preheat oven to 350 degrees.
  3. Rinse the eggplant slices and pat dry on a paper towel lined sheet pan. Mix the flour in a separate pan with some salt and pepper and lightly dust both sides of the eggplant with flour.
  4. Heat enough olive oil in a heavy cast iron skillet, or other heavy pan, and fry the eggplant in batches until golden brown on both sides (watch your heat so the oil doesn’t burn – lower is better!). Transfer them to a plate lined with paper towels to absorb the oil, and repeat.
  5. To assemble: spoon a little of the tomato sauce into a 12” oven dish, or 13x9” pan. Cover with a layer of eggplant slices. Add a few spoonfuls of tomato sauce, then a layer of the mozzarella cheese. Add the remaining basil leaves. Sprinkle with parmesan cheese and repeat the layers to use up the ingredients, ending with the cheese.
  6. Put into the oven and bake for 20-30 min. or until the top is slightly golden and crusty. Cool slightly before cutting into servings. If you are using a cold, ready-made sauce, allow a little extra cooking time (if sauce is not already hot). Serve hot or at room temperature.

It works well to make this the day ahead.    Cover the casserole with foil and heat in a low oven for about an hour or until heated through.  This also freezes well – assemble in a pan and freeze uncooked.  When ready to use, thaw, and bake as above.  You will enjoy this during the winter months if you have a harvest now.  Andiamo mangiare!

Brother Lawrence’s Stuffed Turkey Cutlets

After a dramatic religious conversion, young soldier Nicholas Herman decided to devote his life to following God and learning more about Christ. He joined a monastery and took the name Brother Lawrence of the Resurrection. There, he spent the rest of his life working in the kitchen and repairing his brothers’ sandals. But during his decades of doing seemingly menial jobs, Brother Lawrence discovered a profound truth about having a relationship with God: Experiencing His presence can—and shouldhappen everywhere.  He spent his life serving others.  His letters were later compiled into the now classic book The Practice of the Presence of God.

Brother Lawrence's Stuffed Turkey Cutlets

  1. ​Between 2 sheets of plastic wrap, pound your turkey cutlets with a meat hammer until thin. Melt 2 Tbsp. each of butter and olive oil in a stove to oven safe skillet such as Calphalon or cast iron. Add your sliced onion and saute until lightly golden and soft. Add baby spinach, sun dried tomatoes, herbs and cook over low heat until soft and fragrant. Add the garlic (if desired) and wine. Cook over low heat until the flavors absorb into the tomatoes and onions.
  2. ​Lay your turkey cutlets on a cutting board. Zest the lemon over each one. Lay your mozzarella cheese on one end. Spoon the onion mixture over your cheese, and then top with a generous grating of fresh Parmesan. Starting w/ the cheese end, roll up each cutlet tightly. Sprinkle some bread crumbs into a shallow bowl, and roll each cutlet in to coat.
  3. ​Add the remaining 2 Tbsp of butter and olive oil back to your pan, melt over medium heat and add the cutlets. Sautée each side of the cutlets until golden and then place the skillet in a 300 degree oven for about 12​-15​ min. to cook through.
  4. Take the remaining spinach,and microwave for about one minute until just limp. Sprinkle with onion salt and lay on a platter. Place the cutlets on top of the spinach to serve. Pour the juices along the sides of the cutlets just before serving.

Meat and Spinach Pot Pies

The current revival of iconic American diners stirs my teenage memories, when I spent as much time as possible in my father’s restaurant which had its beginning as a small diner. A local landmark in our town, it grew into a large upscale dining establishment complete with banquet facilities, catering to many special events.

As a diner his menu consisted mainly of American favorites with a sprinkling of Greek and Mediterranean dishes. One of the most popular luncheon specials was a phyllo crusted meat,spinach,feta cheese pie similar to spanikopita, baked and served in an oblong dish. This is a revision of that dish which includes eggplant, fresh tomatoes and Parmesan cheese. The filling can be made and frozen in advance for a time when a quick emergency meal may be needed.

For the filling
  1. Brown and crumble meat in olive oil. Add onions, eggplant, seasonings and cook till tender 12 to 15 min. Then add spinach, garlic, tomatoes and fresh herbs, simmer for 5 min. Pour in sauce, simmer until all ingredients are well blended.
For the puff pastry topper
  1. Preheat the oven to 425 degrees Fahrenheit. Flour a work surface and lightly roll out the puff pastry. Cut the size and shape of 1 large casserole or up to 6 individual bowls or large ramekins, using sharp paring knife. Place the dough on a nonstick baking sheet and wash with egg. Place the hot filling into selected baking dishes sprinkle cheeses over all- top with crust and bake til golden...

Bethany Sun-dried Tomato and Turkey Panini

Our community hosted a retreat day recently for Deacons from a local parish. We served this wonderful sandwich combination which was inspired by the flavors of Italy. Everyone raved and took pictures. Afterwards, the retreatants told us that this place was going to become their annual quiet-day destination. (We hope it wasn’t just based on the food, but we do know it plays a special part!)

As a young sister and chef-in-training, I was taught to pray before my menu preparation. Often the Holy Spirit will nudge us to serve food that triggers memories for people; either of their childhood, their nationality, or maybe a comfort food that would bring healing in a special way. To be used by God in this way is a blessing.

As Brother Lawrence so aptly put it, “We ought not to be weary of doing little things for the love of God, who regards not the greatness of the work, but the love with which it is performed.”

Bethany Sun-dried Tomato and Turkey Panini
In Italian the word panino [pa'ni:no] is the diminutive form of pane (bread) and refers to a bread roll. Panino imbottito (stuffed panino) refers to a sandwich, but the word panino is also often used alone to refer to a sandwich in general. The plural form of "panino" in Italian is panini.

  1. To make the Sundried Tomato Mayonnaise, blend all ingredients together in a Cuisinart until smooth – adjust seasonings as needed
  2. Toast the Panini Bread
  3. Generously spread both sides of bread with the sundried tomato mayonnaise
  4. Layer the sandwich ingredients in this way: Lettuce Cheese Turkey Bacon Tomato Avocado Onion Salt and Freshly Ground Pepper Red Onion, if desired

Villa Sacra Stuffed Peppers

This weekend, we will be harvesting the last of our peppers from our garden.  We have been so blessed to have such an abundance of beautiful vegetables this year, so much so, that we are still reaping the benefits of the eggplant, leeks, butternut squash, and pumpkins.  My brain goes into overdrive, as recipe after recipe comes to mind.. what magical combination can we concoct next?

We had a special request for stuffed peppers from one of our Sisters. She adores them, and has happy childhood memories from her Pennsylvania roots.  I was delighted to fulfill her request.  While in Italy, I came across this wonderfully spicy stuffed pepper recipe.  I modified it with the ingredients I had on hand.  I’ve never been a big fan of green peppers, but I love the sweet, colored varieties, as recommended here.  The flavors of Italy abound: balsamic, red pepper flakes, fennel and spicy sausage. This is sure to be a family favorite.

Villa Sacra Stuffed Peppers

  1. Preheat oven to 375 degrees
  2. Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover and simmer until the rice is tender, and the liquid has absorbed, 20-25 min. Remove from heat and set aside
  3. Cook the ​chopped ​leek in olive oil over medium low heat until the leek begins to soften (watch that it doesn’t burn), about 5 min. Transfer half of this mixture to a large bowl and set aside.
  4. Stir tomato sauce, beef broth, balsamic vinegar, and red pepper flakes into the skillet with half the leek mixture; cook and stir for 1 minute.
  5. Pour tomato sauce mixture into a 9x13-inch baking dish and set aside.
  6. Combine ​the ​ground beef, Italian sausage, fennel seeds, diced tomatoes, parsley, garlic, salt, black pepper, and cayenne pepper into bowl with reserved leek; mix well. Stir in cooked rice and 1 cup of Parmigiano Reggiano. Stuff bell peppers with beef and sausage mixture​, heaping slightly.​
  7. Place stuffed bell pepper halves in the baking dish over tomato sauce; cover baking dish with aluminum foil, and bake in the preheated oven for 45 minutes.
  8. Remove aluminum foil, sprinkle with remaining Parmigiano-Reggiano, and bake until the meat is no longer pink, the peppers are tender and the cheese is browned on top, an addition​al​ 20 to 25 minutes. Andiamo Mangiare!
