FRIED SHRIMP—Crunchy and Delicious

There’s such a wonderful versatility to shrimp, and I think that’s why so many cooks love to work with it.  It’s appropriate for luncheons, dinners, hors d’oeuvres. It’s great served on a hot summer day as a salad or in a Tuscan cheesy wine sauce with pasta on a chilly fall evening. It lends itself to being sautéed, broiled, stewed, roasted, boiled—and to me, the best of all: deep fried, having been dipped in egg, and then flour and panko crumbs. You’ll find it’s perfect for a special occasion!

  1. Rinse shrimp, dry with paper towel. “Butterfly” them by slicing down the back, leaving tails on.
  2. Heat cooking oil in a good sized pot, until shimmering, about 350 degrees
  3. Beat eggs and water together in a small dish
  4. Submerge each shrimp in egg mixture for a several seconds; then toss with flour, making sure it’s thoroughly coated
  5. Dip again in egg mixture, then in panko crumbs
  6. Try adding one shrimp to oil; it should be hot enough to bubble and sizzle, but not so hot as to smoke or burn
  7. Add the shrimp, a few at a time, frying for about 3 minutes, until golden
  8. Drain the fried shrimp on a rack, over paper towel
  9. Serve with lemon wedges and dipping sauce

families housebound, both parents and children, “comfort food” can play a
part in helping relieve the stress and increase relaxation. Meatloaf and
mashed potatoes are a great way to go—hearty, simple and sure to be a hit.

  1. Set oven at 350 degrees
  2. In a large bowl, combine beef, panko or bread crumbs, onion, milk, egg, ketchup, Worcestershire sauce, herbs, salt and pepper.
  3. With a good sized spoon, mix gently until well combined, without over-handling it, which toughens the meat.
  4. Place the meat mixture in loaf pan.
  5. Combine ketchup, wine vinegar, brown sugar and spread over the top of meatloaf.
  6. Bake uncovered for about 55 minutes or until internal temp reaches 160 degrees.
  7. For those who like the ketchup topping to be a little browned and crispy, put under the broiler, turning it around every few seconds, for about 3-5 minutes
  8. Serve with a scoop of your favorite mashed potatoes!

Blackberry Balsamic Salad with Crispy Fried Goat Cheese​ and Grilled Chicken​

We continue to enjoy the harvest from our gardens over these summer months. This week we had an abundance of beautiful lettuce, so we expanded our repertoire and tried out some new combinations for our guests at Bethany. The crisp, salty, creaminess of the fried goat cheese paired with the sweet and pungent combination of the blackberry balsamic vinaigrette is the key here. Summer is a wonderful time to experiment with all sorts of combinations in a salad. “The colors of a fresh garden salad are so extraordinary, no painter’s pallet can duplicate nature’s artistry.” Have fun creating, eating, sharing, and enjoying nature’s storehouse!

Blackberry Balsamic Vinaigrette Dressing
  1. Mix everything well​ in the blender until smooth. Adjust seasonings to taste.​
Fried Goat Cheese
  1. ​Dredge the goat cheese slices/balls in the flour
  2. Dip in the beaten egg
  3. Dip in panko
  4. Fry in oil over medium heat until lightly golden brown before setting aside on paper towels to drain.
Salad
  1. Marinate the chicken in half of the vinaigrette for 30 minutes to over night before grilling over medium-high heat until​ golden and cooked through, about 2-5 minutes per side​. Set aside to cool and slice.
  2. Assemble the salad and enjoy!

Note: Best enjoyed while the fried goat cheese is still warm from frying!

The Ultimate Fish Taco with a Twist

For some time now, our theater group, Elements Theater Company, has been doing their theater productions with a dinner added prior to the show.  Traditionally, this has been a plated meal tying in with themes from the play.  This summer, the show was unique – Alan Bennett’s Talking Heads.  This award-winning series of solo pieces is considered a classic of contemporary drama, universally hailed for its combination of razor-sharp wit and deeply felt humanity.  The menu for this production conjured up images of an upscale Cape Cod pub food feel with a classy fish taco.  I started searching for recipes, and the one I hit on was just the right one.  The result was a colorful “box” dinner with the best fish taco I have ever tasted.  Filled with crunchy cabbage, spicy mayonnaise, sweet and sassy mango salsa and a light and crispy panko- crusted cod – this is party food at its best – all served up in a glossy black box.  Accompaniments included sweet potato fries, fresh corn and bacon salad and a homemade coleslaw.  I’d recommend this for any summer gathering.

  1. Prepare the mango-radish salsa. Remove the peel and pith from the limes and cut between the membranes to remove the segments. Put these "supremes" into a bowl and squeeze over the juice from the membranes. Add the remaining ingredients and mix. Season and refrigerate until ready to use. You can also place all of the ingredients into a food processor and puree for a smoother salsa.
  2. Prepare the pink chile mayonnaise. Put the chipotles in a blender and puree until smooth. Add the sour cream, mayonnaise, adobo sauce and lemon juice and continue to process until the mixture is consistent and creamy. Season with salt and pepper and refrigerate until ready to use.
  3. Prepare the fish. Cut the pieces of fish into 1-ounce strips or to your liking. Set up a breading station of flour, lightly beaten eggs with water, and seasoned panko bread crumbs. Season all with salt and pepper. Dredge the pieces of fish in flour, egg then bread crumbs. Once all the fish is breaded, deep-fry in small batches in (375 degrees F) oil. Drain on paper towels and season with salt. Keep warm until ready to serve.
  4. Place tortillas on a damp towel on a single layer on a cookie sheet, cover with another damp towel and place in a warm oven until ready to use.
  5. To serve, set up the tacos "family-style". Start with your warmed flour tortillas, assemble the fish in a pile on a plate; the pink chile mayonnaise in a bowl; and mango-radish salsa in another. Set a pile of shredded cabbage, cilantro leaves (opt) and lime wedges next to the fish. Have fun building your own tacos.
