Just a Light Lunch Today, Please!

So requested a lady on Personal Retreat in our guesthouse. To be honest, I actually was planning something a little more elaborate such as zucchini lasagna, Caesar salad, and herb-buttered Italian bread. But I replied, “Of course!” and conceived a plan. As I picked fresh lettuce from our kitchen’s “Chef's Garden”, ideas came– what about fried eggplant and deviled eggs to add a special little touch! Some avocado slices, sliced ham or chicken, olives, cherry tomatoes.

Once again, the Holy Spirit came alongside and brought ideas fresh and new. Our retreatant was very blessed…as was I!

Eggplant
  1. Lay a slice of eggplant on paper towel and sprinkle with salt on both sides. After a few minutes, press with the paper towel to extract any excess moisture
  2. Beat the egg with a fork and a little water, thoroughly immerse the eggplant slice
  3. Dredge the slice in bread/panko crumbs while heating butter and oil in frying pan
  4. When butter mixture is hot, add eggplant and fry until soft and golden brown; lower heat if necessary so as not to get too brown too fast – about 10 minutes. Drain on a paper towel
Deviled Egg
  1. Place 2 eggs in boiling water, boiling for 10 minutes
  2. Cool under cold water and peel
  3. Gently slice in half, and carefully remove yolks, placing in a bowl and crush with a fork; the extra egg is good to have for more yolk filling
  4. Add mayonnaise and mustard, more if needed, mix until creamy and smooth

Summer Grilled Chicken and Bruschetta Sandwich

​To me, the perfect sandwich is one that awakens all the senses at once: the crunch of the lettuce, the creaminess of the cheese, the zip of the spice, and the smokiness of the grill. This recipe fits that bill and has become our favorite summer ‘go-to’ sandwich. It’s a feast for the eyes and easy to prepare, packed with flavor. If you can’t get to Italy this summer, let Italy come to you!
This week, we have five young women working as sous-chefs in our kitchen to help us with a week-long retreat. They’ve had some great lessons as they’ve learned how to: pick the proper herbs, chiffonade basil, properly dice tomatoes (yes, it’s a technique!), grill chicken so it is moist and delicious, and many others. I expect them to return to their families with some great new recipes and skills at the end of this week. We hope you enjoy this sandwich for one of your functions this summer. It’s going to be a staple on our menu!

Summer Grilled Chicken and Bruschetta Sandwich

  1. Make bruschetta​ topping: ​in a medium sized bowl. Combine the red onions, garlic, tomatoes, ¼ teaspoon salt, ⅛ teaspoon pepper, 1 teaspoon olive oil, oregano, and basil. Set bruschetta to the side.​​ Drain slightly before using.​
  2. Grill your chicken: season with salt and pepper and rub with about 1 tsp. of olive oil and grill over low flame until 160 degrees on a meat thermometer. Meat is ready to turn when it no longer sticks to the grill. Do not overcook
  3. Split your rolls in half then stack back together, lay on a sheet pan and toast for 5 min in a 350 degree oven.
  4. To assemble, spread pesto sauce on each half of the roll, then layer with lettuce or arugula, mozzarella, grilled chicken then drizzle with balsamic reduction and top with the bruschetta topping. Season with salt and pepper if desired. Serve immediately.

“Torta di porri” (Leek Pie)

If you visit any one of Tuscany’s Trattorias, you will most likely find this on the menu as a “contorni” or side dish. Leeks, parmesan and a light sprinkling of nutmeg — all the flavors of Northern Italy combine to make this savory pie a wonderful addition to beef or veal. This past weekend, we served this as a side to Beef Tenderloin with Balsamic Vinegar to our Oblates on retreat. As we venture into Lent, this meatless side dish could actually become a main dish for lunch. It’s one of my favorite recipes to share with you. Our prayers are with you for a very blessed Lent.

"Torta di porri" (Leek Pie)

  1. Make your pastry and leave it to rest in the refrigerator for an hour before rolling out.
  2. Preheat oven to 350 degrees. Roll out the pastry into a 8" pie plate and blind bake it. Click here for instructions on blind baking a pie crust.
  3. Prepare your filling. Strip away any damaged tough parts of the leek and top extreme ends, and slice the leeks into thin slices.
  4. Put them into a bowl of cold water and swish them with your hand to remove any dirt remaining. Transfer to a colander to drain.
  5. Put the olive oil into a saucepan to heat and add the leeks. Saute gently to soften, and season with salt and pepper.
  6. When the leeks become lightly golden, add the wine and continue cooking over low heat until most of it has evaporated and the leeks are softened. If the leeks are still hard and the wine has evaporated, add 1 cup of hot water and saute for another 10 min. or so until the leeks are soft and there is only a little liquid left in the pan. Remove the saucepan from the heat and cool slightly.
  7. Lightly whip the eggs in a bowl and add the cream, parmesan cheese and a dash of nutmeg. Add the cooled leeks and stir well. Adjust seasonings if needed.
  8. Pour the mixture into your par-baked crust, shifting the leeks evenly with a wooden spoon.
  9. Return the tart to the oven for about 20-30 min. until the top is lightly golden and the filling is set.
  10. Cool slightly and slice into wedges. Serve warm or at room temperature.

“BZT” Panini with Mozzarella, Bacon, Grilled Zucchini, and Tomato

As Sr.Irene mentioned last week, our gardens are just starting to burst with vegetables. This week brought in fava beans and my mom gave us a beautiful basket of her home grown kohlrabi (which immediately sent me “Google-ing” for recipes!). But the majority of our yield so far has been zucchini and yellow squash. Time to be creative with recipes!

It’s a tradition in our Convent for Sunday night dinner to be prepared by the Sisters who share a common bedroom. Our rooms sleep 6-8 sisters. We usually choose our room by lot and switch up every once in a while. That means, there is a mix of personalities and gifts in each room; younger sisters with older ones, cooks with calligraphers, night owls and early birds. Our biggest crosses can become our greatest blessings. We live in Community and that’s how we roll!

Enjoy this crispy and flavorful panini prepared by our Sunday night Sister chefs. A healthy and fun twist on the favorite BLT, this recipe subs out cold lettuce for a piece of grilled zucchini.  Enjoy!

  1. In a large skillet, fry bacon over medium-high heat until golden and crispy, 6 minutes. Transfer to a paper towel-lined plate.
  2. On a baking sheet, brush zucchini strips with 1 tablespoon olive oil and season with salt and pepper. Bake in a 350 degree oven until golden.
  3. Lay tomato slices on a paper towel-lined baking sheet to soak up liquid.
  4. Place ciabatta halves on a cutting board. Brush insides of loaf with olive oil. Layer bottom half with zucchini strips, bacon, mozzarella, tomatoes, and basil. Season with salt and pepper. Top with other half ciabatta. Halve loaf and brush outside with olive oil.
  5. Preheat a panini press. (If you don’t have a panini press, cook sandwich in a large skillet over medium-high heat with a heavy pot or pan on top to weigh it down; flip sandwich halfway through to make sure both sides get cooked evenly.) Place half of sandwich in panini grill and cook, pressing down from time to time, until golden and cheese is melty, 6 to 8 minutes.
  6. Repeat with remaining sandwich half, then serve cut into triangles.

Hot Chicken Salad Sandwich

What is it about sandwiches that make so many people so happy? It seems to me that the very same food served on a plate often gets less positive response than it does in a bun, on a roll, or even on a loaf of bread, as it was last night at the convent.Chicken salad was on the menu for our dinner and the cook of the day chose to serve it as a hot open faced sandwich, which surprised everyone. She sliced loaves of Italian bread lengthwise, placed a layer of chicken salad on each, topped them with grated cheese and melted them under the broiler for a few minutes. When they came out they were met with exclamations of “WOW, FANTASTIC, WHAT FUN!”

Because the meal was an informal picnic type, the loaf was served whole, allowing each person to decide what size piece they wanted cut for them. For a more refined touch it can be sliced in diagonal pieces and plated, and still be a sandwich!
