Is it possible that summer could have come and gone so fast? In thinking back at the blessings we witnessed, large and small, I’m amazed at just how much the Holy Spirit loves to come alongside in every circumstance. Summertime at the Community of Jesus is an event filled season, which generally goes hand in hand with receptions! One especially stands out, looking back from a cook’s point of view: an organ concert, attended by an exceptionally large number of people. It’s always a blessing/challenge to come up with new ideas of what to serve at such an occasion—something fresh, original, visually attractive—and something really tasty. The kitchen team definitely “approved” of lime-macaroon bars, and so did our guests!

  1. Set oven to 350. Using a 9x13 baking pan, spray lightly with baking spray; you may also prefer to line pan with foil, spraying it lightly.
  2. Zest and juice the limes; set aside
  3. For crust, with an electric mixer, beat butter for a few seconds, then add sugar and beat until light and fluffy. Add eggs, vanilla, lime juice, and zest, mixing until combined.
  4. Blend in flour, baking powder, and salt. Spread batter evenly in the prepared pan. Bake about 15 minutes or until set and dry. Remove from oven.
  5. Meanwhile, in a large bowl combine the egg white, coconut, and condensed milk. Spoon coconut mixture evenly over hot crust. Bake about 20 minutes more or until topping is golden brown. Cool on a wire rack and cut into bars!

Savory Green Tomato Fritters
Green tomatoes. What to do with these beautiful yet green garden tomatoes? A few things sprang to mind when I saw a flat of green tomatoes tucked in amongst other garden produce given to us from a local farm this week: fried green tomatoes (a classic!), green tomato salsa verde, green tomato muffins… Then a recipe caught my eye for a green tomato fritter–just the thing! With a few “tweaks” to the original recipe–omitting the cinnamon and sugar in favor of a savory version–this late summer treat is a reminder not just the generosity of the giver, but an invitation to explore the possibilities of an otherwise puzzling and often overlooked gift from the garden–perfectly unripe.

  1. In a deep, heavy pan, heat 3 inches of oil to 365° F, or use a crockpot with a fry basket.
  2. Combine flour, baking powder, salt, and soda. Stir in the green tomatoes, corn and seasonings.
  3. In a separate bowl, whisk the eggs with the milk and butter. Stir into the first mixture until just blended. Batter should hold its shape when dropped into hot oil–add more flour if needed to thicken the batter.
  4. Working in batches, drop the batter by tablespoons into the hot oil, cooking until fritters are a deep golden brown, turning about halfway through.
  5. Remove to paper towels to drain and enjoy!

Summertime Blueberry Nectarine Crumble Pie
This past weekend, I had the wonderful opportunity to pick blueberries from a local farm with a good friend of mine. We arrived shortly after sunrise on a glorious Sunday morning. We talked little and just enjoyed circling the bushes from different angles to find the plump berries. Her husband had fashioned coffee cans into containers that dangled from our necks to collect the berries. We both used this time to pray and be thankful. It's amazing how close to God we both felt in nature. So much beauty and peace surrounded us. I hope you will taste God's goodness in this tasty summertime treat.

  1. Preheat oven to 375 degrees F. Line the pie crust with parchment and add pie weights or dried beans. Place on a parchment or foil lined baking sheet and bake the crust for about 20 min. Remove parchment and weights and return to the oven for 10 min. until slightly golden. Remove from oven and set aside to cool.
  2. Prepare the filling: Whisk together the sugar, cornstarch, salt and lemon zest. Put the blueberries in a mixing bowl and add the sliced nectarines, lemon juice, vanilla and the sugar/cornstarch mixture. Gently toss and let sit as the berries start releasing their juices.
  3. Meanwhile, prepare the crumble: In a food processor, combine the flour, brown sugar, butter and white sugar. Pulse until combined (this can also be done by hand). With your hands, press topping together to form clumps and refrigerate until ready to use.
  4. Assemble the pie: Pour the blueberry/nectarine mixture into your blind baked crust. Top with the crumble mixture - covering the top and spreading evenly.
  5. Bake until the filling bubbles and the pie is golden brown, about one hour. Allow to cool slightly and serve with vanilla ice cream or whipped cream.
  6. Enjoy!

Tomato, Peach and Basil Flatbread

Flipping through a folder of collected food photos and recipes, my eye was captured by one that looked like a pizza—and yet it wasn’t.  

Here was a  bright combination of fresh fruit and vegetables, specifically sliced tomatoes and peaches on a flatbread topped with a mixture of ricotta and parmesan cheese.  What fun! With no recipe to follow, I launched into producing it on my own until I later found it written up in the June issue of “Cooking Light.”

If you’re looking for  a fun food that’s quick, easy, tastes great and is still healthy you will want to try this. Enjoy!

  1. Preheat grill on medium high heat.
  2. Using a whisk, mix the ricotta, onion salt, oregano, and pepper in a bowl and set aside.
  3. Brush both sides of the Naan bread with oil and grill each side for 2 minutes and remove from grill.
  4. Spread the ricotta mixture evenly over the top, arranging the tomatoes, peaches and basil leaves as desired.
  5. Cut each naan into 8 slices and arrange on a plate to serve.

Cran-Apple Compote with Meringue and Caramel Sauce

I had just finished my evening rituals with Gratsie (my Maine Coon cat) and was about to leave the family room when our guest cook sister entered the room waving her camera at me with a look in her eye that told me she was pleased with something she wanted to show me…

With one innovative idea she had succeeded in transforming our popular summer tart into a Fall/Winter version using apples and cranberries laced with caramel sauce, replacing the usual summer strawberries, peaches and nectarines.

A graceful (and delicious) transition from one season to another with an amazing result! We both smiled as the cat swished her tail, and we all went to bed purring.

Cran-Apple Compote with Meringue and Caramel Sauce

Meringue
  1. Separate one egg at a time into a small bowl, letting the white fall into the bowl and discarding the yolk. If there’s any trace of yolk in the white, discard the white and start over. If it’s yolk-free, transfer to a clean medium mixing bowl. Repeat with the remaining 2 eggs.
  2. Add cream of tartar to the whites and beat with an electric mixer on medium-high speed until soft peaks form.
  3. Slowly add sugar, about 1 tablespoon at a time, until all the sugar has been added. Continue beating until the whites are stiff and glossy. Add vanilla and beat for 30 seconds more.
  4. Position racks in the upper and lower thirds of the oven; preheat to 200 degrees Fahrenheit.
  5. Line 2 large baking sheets with parchment paper. Place a small amount of the meringue under each corner of the paper to secure it to the pan.
  6. Fill a 1-quart sealable plastic bag (or pastry bag fitted with a 1/2-inch plain tip) with the meringue. Seal the bag almost completely, leaving a small opening for air to escape from the top as you squeeze.
  7. Snip off one corner of the bag with scissors, making a 3/4-inch-wide opening. Fold the top of the bag over a few times, then gently push the meringue down to the snipped corner.
  8. Working with the bag perpendicular to the baking sheet, pipe the meringue into 2-inch-diameter tarts, spacing them about 1/2 inch apart.
  9. Bake the tarts until dry and crisp throughout, about 1 1/2 hours. Transfer the pans to wire racks and let the tarts cool to room temperature, about 15 minutes.
Apple-Cranberry Compote
  1. Peel and chop the apples of your choice. Sprinkle with lemon juice to prevent browning and set aside. For this recipe, we used Golden Delicious.
  2. In a medium-sized saucepan, melt the butter and add the chopped apples on medium heat.
  3. Add the sugar and seasonings to the apples and cook until fork-tender. Keep an eye on the apples and sugar, reduce heat if needed. The sugar should melt into a consistency similar to syrup. Turn the heat down if sugar starts to caramelize.
  4. Add the whole cranberries and cook a few minutes more until the cranberries start to burst. If you prefer, cook a bit longer to cook the cranberries a little more, adding sugar as necessary, depending on how tart the berries are.
  5. Remove from heat, set aside and arrange the meringues on a plate or serving platter.
  6. Gently heat the caramel sauce and spoon into the center of the meringue, tumbling the Cran-Apple compote on top. Drizzle with extra caramel sauce if desired.
  7. Serve at room-temperature and pair this tangy-sweet seasonal dessert with a steaming cup of tea, coffee or pressed cider!

Serve with your favorite Caramel Sauce!

Holiday Buttercrunch

At our Convent and Community each year, it is tradition for us to celebrate the Twelve Days of Christmas. Advent is a time of waiting and the twelve days that follow Christmas allows time for us to reflect and live the “Incarnation of Christ” as we journey towards our yearly profession of Vows on Epiphany. It’s a time of Enclosure for us when we can withdraw from the busyness of our daily lives and set aside time of quiet for Christ and community.

This Christmas, each of us cooks decided we’d make one special gift for the sisters over each of the twelve days. I chose Monday the 26th and couldn’t wait to make this decadent candy. We have lots of chocolate lovers in the Sisterhood, so I thought it might just be ‘the bomb’ and it was! With just a couple tweaks, it is now going to become my favorite holiday indulgence. I had to quadruple the recipe in order to make enough for 65 Sisters and have some extra for gifting, so it will multiply out well. This recipe is just too special to make for just “any” time of year, so save it for a special occasion.

  1. In a large, deep heavy-bottom saucepan, melt the butter.
  2. Stir in the salt, sugar, water, and corn syrup, and bring the mixture to a boil. Boil gently over medium heat, without stirring, until the mixture reaches hard-crack stage (300°F on an instant-read or candy thermometer). The syrup will bubble without seeming to change much for awhile, but be patient; all of a sudden it will darken, and at that point you need to take its temperature and see if it's ready, about 10 to 12 minutes. Pay attention; too long on the heat, and the syrup will burn.
  3. While the sugar mixture is gently bubbling, spread half of the toasted nuts (1 cup), in a fairly closely packed, even single layer, on a lightly greased baking sheet or 1/2 sheet pan.
  4. Top with half the chocolate chips (1 1/3 cups).
  5. When the syrup is ready, pour it quickly and evenly over the nuts and chocolate. Immediately top with the remaining chocolate (1 1/3 cups).
  6. Wait several minutes for the chips to melt, then gently, using the back of a spatula, spread the chocolate evenly and top with the remaining toasted nuts (1 cup).
  7. Allow to cool at room temperature and the chocolate will harden. When cool, break it into uneven chunks.
  8. Store cooled candy tightly wrapped; it'll stay fresh for a couple of weeks at room temperature. Freeze for longer storage.
