Frosted Lemon Sugar Cookies
Everyone in the neighborhood knew that my mother made the best sugar cookies on the block, but not everyone knew what made them them the best… When I discovered the secret I felt I’d made one of the greatest discoveries in the culinary world. Mama’s good friend Olga was Jewish and never used dairy products, so instead of butter she substituted schmaltz--which is rendered chicken fat--that gives the recipe a distinct flavor and richness unlike any other shortening--including real butter!

Cookies
  1. Preheat oven to 350 degrees.
  2. Cream schmaltz and sugar in an electric mixer using a paddle attachment.
  3. Add eggs (one a at time), lemon juice and lemon zest. Beat until well incorporated.
  4. Slowly add flour, baking soda and salt.
  5. Roll dough into balls roughly 1 ½ inches wide and place on a greased cookie sheet, or a baking sheet lined with parchment. Press each cookie with a bottom of a glass dipped in sugar.
  6. Bake for 10 minutes or until the bottoms are slightly golden. Remove and cool completely.
Frosting
  1. Combine all the ingredients until it reaches a creamy consistency. If it’s too thick, add either lemon juice for an extra shot of lemon or milk until it thins to the desired thickness.
  2. Either frost with a spreader (pictured) or pipe onto the cookies and enjoy!

Who doesn’t want to sit down to a fresh, colorful and crispy salad topped with your favorite dressing?  The simplicity, the beauty, the different textures all combine to make this lunch time treat such a pleasing and healthy option.

Recently we served this for a retreat, and it received such rave reviews that we thought we’d share our salad bar ideas with you.  We haven’t included amounts, because you can make as little or as much as you want.  As a guide, people would probably want to plan on 1 Tbsp. of toppings per person.   It’s also the perfect “to go” meal – just prep all the toppings, throw them in zip-lock bags or containers and then dish up before serving.

We hope you enjoy some of these ideas as much as we do.

Salad Bar Suggestions:

Lettuce – a blend of iceberg, romaine, bibb and red leaf is nice

diced ham
diced turkey or chicken
hard boiled eggs
cheese – Havarti, swiss, cheddar – all recommended
crumbled gorgonzola
tomatoes, wedged or grape or cherry tomatoes
roasted beets, julienned
avocado
cucumber
celery
olives
grated carrot
broccoli and/or cauliflower flowerets
peas
chopped scallions
sliced red onion
colored peppers
garbanzo beans
cooked lentils
diced cooked bacon
cooked quinoa
sunflower seeds, roasted and salted

Homemade Bleu Cheese Dressing
  1. Makes 1 cup (250ml), about four servings If you can’t get buttermilk, mix one part milk (whole or lowfat) with one part plain yogurt (regular or lowfat) to approximate the taste. Any kind of blue cheese, domestic or imported, should work well.
  2. In a medium bowl, mash the blue cheese with the salt and pepper with the back of a fork until the pieces of cheese are finely broken up.
  3. Stir in the chives, sour cream, buttermilk, and lemon juice or wine vinegar until well mixed.
  4. Add a few drops of red wine vinegar. Taste, and adjust any of the seasonings to your liking and if the dressing too thick, add a bit more buttermilk. *Recipe adapted from David Lebovitz
Green Goddess Salad Dressing
  1. Place the mayonnaise, scallions, basil, lemon juice, garlic, anchovy paste, salt and pepper in a blender and blend until smooth.
  2. Add the sour cream and process just until blended. Refrigerate the dressing until ready to serve.
English Garden Salad Dressing
  1. Combine all but the oils in a bowl and whisk. Slowly whisk in the oils to combine.
Balsamic Vinaigrette
  1. Combine the olive oil, balsamic vinegar, honey, Dijon mustard, shallot, garlic, salt, and black pepper together in a glass jar with a lid.
  2. Replace lid on the jar and shake vigorously until thoroughly combined.

End of Summer Fresh Lemon Gelato

September is season unto itself on Cape Cod. As many of our visitors return home to school and work, there is a quieter spirit. Yet the air is warm, gardens are full, the beaches are less crowded and the sunsets are beautiful. We are enjoying the best month of the year here. There is still lots of outdoor living to be done before the crispness comes with days of shorter daylight. Thought this recipe for one of the best and freshest tasting gelatos might be just the thing for some of those late summer warm nights.

  1. In a bowl, using a hand mixer combine creams and sugar until sugar dissolves
  2. Stir in vanilla, lemon juice and zest and salt
  3. Refrigerate the mixture for at least 2 hours
  4. Pour the mixture into an ice cream maker and process according to manufacturer's directions.
  5. Serve in a hollowed out lemon half for a stunning presentation.
