Ingredients
- Cookies
- 2 cups flour
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp salt
- 1/2 cup butter 1 stick - room temperature
- 1/2 cup brown sugar packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 1/2 cups carrots grated, if you the larger grater side, cut into smaller pieces
- Frosting
- 1 cup cream cheese 8 ounces, room temperature
- 1/4 cup butter 1/2 stick - room temperature
- 1 1/2 cups confectioners' sugar sifted
- 1/2 cup coconut
- 1/4 tsp salt
- 1 tsp vanilla
- 1/2 tsp coconut flavoring

- Preheat oven to 350 degrees. Line a baking sheet with parchment paper
- Whisk flour and dry ingredients together and set aside.
- In an electric mixer, with the paddle attachment, beat butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla.
- Gradually add dry ingredients until just combined; fold in grated carrots.
